Peanut-Butter Dip

Veggies and dip are a match made in heaven, and this one gets a nutritious kick from peanut butter and coconut milk. Use full-fat coconut milk for the best results, not the light version.

Ingredients:

  • 1 (13.5-ounce) can coconut milk
  • 1/2 cup creamy peanut butter
  • 2 tablespoons fresh-squeezed lime juice
  • 1 tablespoon low-sodium soy sauce
  • 1 tablespoon brown sugar
  • 1/2 teaspoon grated ginger
  • 1/8 teaspoon salt
  1. Combine all of the ingredients together in a saucepan over medium heat. Cook for about 5 minutes, until smooth and thickened.
  2. Cover and refrigerate until ready to serve – the mixture will continue to thicken as it cools.

We like it best with carrot sticks for dipping, but broccoli florets, bell pepper strips, and cucumber spears would all be great choices.

PB&J Smoothie Pops

So many schools are peanut butter-free these days, and I can’t slip this vegan staple into Travis’s snack bag any time soon. So we’re sneaking peanut butter and jelly into other times of the day! These smoothie pops are perfect for an afternoon snack – or even breakfast on a hot morning.

Ingredients:

  • 1 cup strawberries
  • 1 cup sliced banana
  • 1 cup almond milk
  • 2 tablespoons peanut butter
  • 1 tablespoon strawberry jelly
  1. Combine all the ingredients in a blender and process until smooth.
  2. Pour the mixture evenly into 6 popsicle molds; freeze for 8 hours, or until set.

Peanut Butter-Topped Bananas

It’s National Peanut Butter Lover’s Day, so we topped our bananas with peanut butter frosting, almost like cupcakes!

Travis loved helping to slice a banana. Give your child one banana to practice on, while you cut another into pieces about 1-inch wide.

Place peanut butter in a zip-top bag and cut a hole in one corner of the bag; squeeze like frosting onto the banana pieces.

Hint: Fill a second bag with peanut butter for your child to squeeze all over the cutting board, just for fun!

We topped our “cupcakes” with a sprinkle of shredded coconut and a raspberry.
