This recipe is perfect for the whole family because it can be adapted to suit everyone’s tastes, from little toddlers to the grown-ups!

Ingredients:

  • 1 pound meatless crumbles (such as Gardein)
  • 1 cup frozen corn
  • 1 tablespoon chili powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon oregano
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1 teaspoon salt
  • 1 cup diced tomatoes
  • 1 cup shredded non-dairy cheddar
  • Hard taco shells
  1. To prepare the filling, heat the meatless crumbles and corn in a skillet coated with cooking spray for 8 to 10 minutes, until the crumbles are lightly browned.
  2. Meanwhile, prepare the taco spice: in a small bowl, stir together the chili powder, onion powder, garlic powder, oregano, cumin, paprika, and salt.
  3. Remove any portion of the filling for family members who don’t want spice (e.g. my kids!). Add the taco spice to the skillet with the rest of the filling.
  4. Warm taco shells according to package directions. Serve with the filling, tomatoes and cheddar shreds.

My 1st grader loves the filling stuffed into taco shells with lots of cheese, but omits the tomato.

Meanwhile I serve a sort of deconstructed version to my toddler with the taco shell broken into “chips”, cheese on the side, and a mixture of crumbles, corn, and tomato on her plate.

Build Your Own Tacos

When Travis came home for lunch today, we set up a whole taco assembly line in the kitchen. He loved the hands-on nature of this recipe, care of his final issue of High Five magazine.

Ahead of time, I cooked a package of Gardein chick’n strips, and let cool. Travis helped shred the chicken, and we sprinkled it with 1 teaspoon taco seasoning. Microwave for 1 minute to rewarm.

Meanwhile, warm up hard taco shells according to package directions. Travis then got to hone his knife skills; together we chopped a tomato and a little lettuce.

Time to assemble! We made a big line with everything.

In goes:

  • Gardein chick’n
  • Tomatoes
  • Lettuce
  • Shredded Daiya cheddar
  • Non-dairy sour cream
  • Guacamole
  • Mild salsa

Travis loved it! We made one version that was a stuffed taco and one that was more like nachos.

If your kids don’t like Gardein chick’n, try the recipe using black beans and roasted sweet potatoes as the base instead.

My Punny Valentine Tacos

It’s the second year that Travis and I are on the hook to produce Valentine’s cards for all his classmates, and we turned once more to Parents magazine. This year, all of the Valentine’s Day cards featured cute puns about food. I asked Travis to pick his favorite, so tacos it was!

First we traced circles onto yellow cardstock. You want the circles to be about 5 inches across, so a DVD makes the perfect item to trace. Travis was so proud that he traced all 20 of the ones we made, his circles getting neater and neater each time.

Next we folded the circles in half. Be sure to make a nice crease

Fill one half of the “taco shell” with glue, and press on green shredded paper. Travis was so into this material, since we’ve never used it before. Let dry.

Our counter was starting to look like a taco stand!

Once the “lettuce” dried, we add a few red “tomatoes” to each taco – with red heart stickers of course.

On the front of each taco shell, I wrote out “Taco ’bout a good friend! Love Travis”. Note: You can also write this on the inside of the shell, if preferred.

Travis was so excited about this project, and proud that we had shells, lettuce, and tomatoes in our tacos. We can’t wait to give them to the class!

Turkey Tacos

This adorable dinner recipe from Ranger Rick Jr. is great to make with kids in the run-up to Thanksgiving. Travis was absolutely delighted with his feathered friend. Adults will have to do some chopping ahead of time, and then kids can take it from there to assemble.

To start, pick your favorite taco filling, and add to hard shell tacos.

Add cut bell pepper pieces in a fan shape around the taco shell for the feathers.

Place a slice of turkey-head-shaped vegan American cheese (such as Tofutti) on top of the taco shell. Add 1 triangle of orange bell pepper for the beak and 1 strip of red bell pepper for the wattle.

Tasty Tacos

French fries in tacos? Kids and adults alike will say, ‘Yes please!’ to this tasty twist on a weekday staple.

Ingredients:

  • 4 flour or corn tortillas
  • 1/2 cup refried beans
  • 1/2 cup shredded Daiya cheddar
  • 1/2 cup cooked corn kernels
  • 1 cup French fries
  1. Spread each tortilla with about 2 tablespoons beans, and sprinkle each with 2 tablespoons cheddar and 2 tablespoons corn.
  2. Top each serving with about 1/4 cup fries, then roll up burrito style or fold in half like tacos to serve.

Add toppings like salsa, non-dairy sour cream, or guacamole, if your family likes ’em.
