This sweet twist on classic tortilla nachos is sure to delight, and a great way to use up the last of your fall apple bounty!

Ingredients:

  • 1 large apple
  • 2 tablespoons peanut butter
  • 2 tablespoons rice cereal
  • 1 tablespoon shredded coconut
  • 1 tablespoon Enjoy Life mini chocolate chips
  1. Slice the apple and arrange on a platter
  2. Heat the peanut butter in the microwave for 30 seconds, and drizzle over the apples.
  3. Sprinkle with the cereal, the coconut, and the mini chips.

As the name of this recipe suggests, this twist on nachos is just right for starting the day before kids head off to school. Of course, nothing wrong with serving the nachos for dinner, either! Check your tortilla chip bag for the suggested serving size, which will depend on the size of the chips and particular brand. Generally “one serving” makes the right-sized base for the rest of these ingredients. The portion below will serve two little tots, or one hungry big kid (or grown-up!)

Ingredients:

  • 1 serving tortilla chips
  • 1/3 cup scrambled tofu (store-bought or homemade)
  • 1 tablespoon guacamole
  • 1 tablespoon salsa
  • 1/4 cup shredded Daiya cheddar
  1. Arrange the tortilla chips in a pile on a foil-lined baking sheet.
  2. Top evenly with the tofu scramble, guac, salsa, and cheese.
  3. Bake at 425 degrees F for 5 minutes, just until the cheese melts.

Sweet-Potato-Fry Nachos

Frozen sweet potato fries are the base in this novel twist on nachos. My preschooler dubbed this the “cheesy dinner,” the perfect alternate name! Note: For older kids, you can add a bit more zip by adding 1 cup store-bought green or red salsa in step 2 below.

Ingredients:

  • 1 (20-ounce) bag crinkle-cut sweet potato fries
  • 1 (15-ounce) drained and rinsed can black beans
  • 1 (15-ounce) drained can corn
  • 2 cups shredded Daiya cheddar
  • 1 avocado, sliced
  1. Spread the fries on a baking sheet and bake at 425 degrees F for 24 minutes.
  2. Top the fries evenly with the black beans, corn, and cheddar (and salsa, if using). Return to the oven and bake for an additional 5 minutes.
  3. Divide the nachos evenly among 4 to 6 plates, and top each serving with sliced avocado.

Red, White, and Blue Nachos

My favorite way to bring the colors of the American flag into our home on Independence Day is by concocting something in the kitchen! If savory nachos aren’t your freedom fare of choice, try flags for breakfast or a sweet flag-colored sundae instead. However you celebrate today, Happy 4th of July!

Ingredients:

  • 6 ounces blue tortilla chips
  • 1 cup salsa
  • 1 cup shredded Daiya mozzarella
  • Chopped tomatoes
  • Sliced olives
  • Black beans
  1. Let your little chef spread the tortilla chips in an even layer on the bottom of a 13×9-inch baking sheet.Red Nacho (1)
  2. Spoon the salsa evenly over the chips. (Note: rotating the baking sheet was very helpful so Travis could reach the chips evenly).
  3. Sprinkle the cheese evenly on top.Red Nacho (2)
  4. Adults: Broil the nachos for 3 minutes.

We added extra toppings of chopped tomatoes, sliced black olives, and black beans to turn the nachos into a full meal, but you can stick with the trio of read white and blue ingredients if you prefer!
