Ingredients:
- 1 cup pearl barley
- 3 cups vegetable broth
- 1 cup finely chopped cremini mushrooms
- 1/4 cup finely chopped onion
- Combine all the ingredients in a 3-quart baking dish.
- Cover and bake at 325 degrees F for 1 and 1/2 hours.
